Freezing Eggs
We were gifted a couple dozen brown eggs recently. While, having grown up on a farm and having ‘shopped’ at ‘the egg lady’ shop in Harrisville, I don’t have an issue with brown eggs. Eggs is Eggs (except I really don’t like Eggland’s best for some reason). Everyone else in the house find them to be too rich for everyone’s taste.

Two dozen eggs that I had to hide in something… before they started to get old…. sigh…
Found out I can freeze them!!!
I decided to freeze them in individual(ish) containers two at a go. I froze some “whole” (cracked, simply, into a container) and some scrambled into a container. They froze flat and square in the square containers I decided would fit nicely in my freezer.
I found out that I can freeze just egg whites and just egg yolks in ice cube trays so I don’t have to use whole eggs. My next adventure will be with that. As I hear, I have to add a little bit of salt or a little bit of sugar to the yolks to they don’t get a funky texture. Kind of looking forward to that little adventure, too.
